Chris Staines Recipe: Salad of peas, asparagus, purple sprouting broccoli, feta and mint
Ingredients (serves 4)
3-4 handfuls of freshly podded pea
1 bunch purple sprouting broccoli
1 bunch asparagus
20 or so Jersey royal potatoes, washed and cooked
150g feta cheese chopped
Small handful chopped mint leaves
Lemon juice, to taste
Olive oil, to taste
Salt and freshly ground black pepper
Lightly chargrill asparagus and broccoli
Then, simply toss all of the ingredients together in a bowl and season with a little olive oil, lemon juice and salt and pepper.
Consider serving this with a nice crisp skinned fillet of sea bream or seabass for a decadent and delicious dinner.
